Ripening chambers are used in the field of mogul technology for manufacturing confectionery products based on starch and gelatine. The liquid hot mass is poured into moulds, which are made out of starch - also referred to as "powder". The individual powder boxes are then stacked and stored to stabilise the casting compound and ripen in a conditioning chamber (ripening chamber) under precisely defined conditions.

For the drying and cooling process, the highest requirements are placed on the ripening chamber to achieve an invariably high and consistent product quality. WEISSHAAR ripening chambers are precisely matched to the technical mogul processes and meet the highest design and workmanship standards. The isolated cell consists of self-supporting sandwich panels, which are planked on the inside with stainless steel and with powder-coated steel on the outside. Specially designed air ducts serve to distribute the conditioned air very evenly in the chamber, which is essential for high-grade mogul products. During the ripening process, the chamber is sealed with an isolated sectional gate or roll-up gate.

The ripening chamber features a high-performance programmable logic controller with a connected control panel. The control panel allows users to conveniently enter all process data.

In program mode, the described setpoints can also be allocated to specific mogul recipes. Furthermore, it also possible to create graphic and numeric documentation of all setpoints and actual values of a batch. In addition to displaying the pure process data, the panel has a convenient visualization system for the entire ripening chamber and also displays the system components.
