Ripening chambers with mogul technology

Ripening chambers are used in the field of mogul technology for manufacturing confectionery products based on starch and gelatine. The liquid hot mass is poured into moulds, which are made out of starch - also referred to as "powder". The individual powder boxes are then stacked and stored to stabilise the casting compound and ripen in a conditioning chamber (ripening chamber) under precisely defined conditions.

The ripening chamber features a high-performance programmable logic controller with a connected control panel. The control panel allows users to conveniently enter all process data. In program mode, the described setpoints can also be allocated to specific mogul recipes. Furthermore, it also possible to create graphic and numeric documentation of all setpoints and actual values of a batch. In addition to displaying the pure process data, the panel has a convenient visualization system for the entire ripening chamber and also displays the system components.
